Holiday Mocha Fudge Recipe
- 5.33 ounce. can evaporated lowfat milk
- 2 tbsp. butter
- 2 c. miniature marshmallows
- 1/2 c. butterscotch morsels
- 1 teaspoon vanilla extract
- 1 2/3 c. sugar
- 1/2 teaspoon salt
- 6 ounce. pkg. semi - sweet chocolate morsels
- 1 tbsp. instant coffee granules
- 1/2 c. minced pecans
- Candied red and green cherries (optional)
- Combine lowfat milk, sugar, butter and salt in a Dutch oven.
- Cook over medium heat, stirring constantly till sugar dissolves.
- Bring to a boil.
- Cook 3 min or possibly till mix reaches 225 degrees; stir occasionally.
- Remove from heat, and add in next 6 ingredients, stirring till marshmallows heat.
- Pour into a buttered 8 inch square pan.
- Cold and cut into squares.
- Garnish with candied cherries, if you like.
- Yields 3 dozen squares.
