Wild Mushroom Soup
- 12 cup white button mushrooms
- 12 cup shitake mushroom
- 12 cup cremini mushroom
- 12 cup portabella mushroom cap
- 18 cup onion
- 2 garlic cloves
- 2 tablespoons fresh basil leaves
- 1 tablespoon olive oil
- 12 ounces beef broth
- Chop all mushrooms, onions and garlic.
- finely chopp the fresh basil leaves.
- Place olive oil in 2 qt pot and heat at medium.
- saute garlic, onions and all mushrooms till onions turn translucient.
- Add broth and remaining ingrediants and cook over low heat for 30-40 minutes.
- Serve with choice of croutons, cheese or bread topping.
