Blue Cheese Asparagus Recipe
- 1 1/2 lbs. fresh asparagus spears
- Vegetable cooking spray
- 2 teaspoon reduced-calorie butter
- 2 tbsp. cider vinegar
- 3 tbsp. crumbled blue cheese
- 2 tbsp. minced pecans, toasted
- Snap off round ends of asparagus.
- Remove scales from stalks with a knife or possibly vegetable peeler, if you like.
- Coat a large non-stick skillet with cooking spray; add in butter.
- Place over medium heat till butter melts.
- Add in asparagus, and saute/fry 3-4 min.
- Add in vinegar, cover and simmer 2-3 min or possibly till asparagus is crisp tender.
- Add in blue cheese and minced pecans, toss gently.
- Serve hot.
- Yields 6 servings (49 calories per serving).
