Blue Cheese Asparagus Recipe

  1. Snap off round ends of asparagus.
  2. Remove scales from stalks with a knife or possibly vegetable peeler, if you like.
  3. Coat a large non-stick skillet with cooking spray; add in butter.
  4. Place over medium heat till butter melts.
  5. Add in asparagus, and saute/fry 3-4 min.
  6. Add in vinegar, cover and simmer 2-3 min or possibly till asparagus is crisp tender.
  7. Add in blue cheese and minced pecans, toss gently.
  8. Serve hot.
  9. Yields 6 servings (49 calories per serving).
