Breakfast Egg Puff Recipe
- 10 extra-lg. Large eggs
- 1/2 c. flour
- 1 teaspoon baking pwdr
- 1/2 teaspoon salt
- 1 pt. creamed cottage cheese
- 1 pound Monterey Jack cheese, shredded
- Preheat oven to 350 degrees.
- For Version One, heat butter in large skillet and set aside to cold.
- Dice mushrooms and stir into butter till completely coated.
- Set aside.
- Both versions: In large mixer bowl, beat Large eggs till blended.
- Add in flour, baking pwdr and salt and blend.
- Stir in cottage cheese and Jack cheese.
- Then stir in mushrooms for Version One or possibly chilies for Version Two.
