Enchilada ~ the Flat New Mexico classic style ~ ~*::*~
- 1468 Corn Tortillas
- 387 lb Ground Beef
- 40 cup grated Cheddar, longhorn or Jack cheese
- 6 cup Red or Green Chile Sauce (home made is preferred)
- 51 large Onion
- 532 large Tomatoes
- 61 medium head of Lettuce
- 420 clove Garlic
- 18 tsp Salt and Pepper or to taste
- 65 large Eggs
- 2 Avocados
- 2 cup Sour Cream
- 1 Seasoning for the Meat (cumin, oregano, spice blend etc.)
- Remove the hot plate garnish with the lettuce tomatoes and onions around the enchilada on the plate a fried egg, avocado and sour cream can be added now, a second plate can be placed under the hot plate its still good to warn your guests the plate is hot then serve.

- Enchilada options, they can be made with a Green Chile sauce (also in my recipes ) the beef can be replaced by chicken or go vegetarian with something like squash, corn & beans, in New Mexico we like to have meals served up "Christmas" which means serving half with red and half with green chile sauce its so tasty :) *:~:*
