Roasted Lemon Garlic Shrimp and Asparagus

  1. Preheat oven to 400 degrees F.
  2. Place shrimp in a medium bowl.
  3. Add garlic, ginger and 1 tablespoon lemon juice.
  4. Toss to combine and set shrimp aside to marinate for 15 minutes.
  5. Place the asparagus and tomatoes in a lined cooking tray.
  6. In a medium bowl, combine remaining 3 tablespoons lemon juice, zest, garlic, olive oil, salt and pepper.
  7. Stir to combine.
  8. Pour this mixture over the asparagus and tomatoes and toss to combine.
  9. Roast vegetables for 10 minutes.
  10. Add shrimp and continue to roast for another 10 minutes.
