The Firehouse Supreme Grilled Cheese

  1. Chop onions and all peppers and saute in skillet.
  2. Add salt and pepper to taste.
  3. Do this first so it can saute while you prepare bacon and Goetta/Scrapple.
  4. Cook bacon in skillet.
  5. I prefer it crunchy - seems to work better in a sandwich.
  6. Set aside when finished.
  7. Cook Goetta or Scrapple in another skillet.
  8. Again I prefer this a little over cooked as well.
  9. Prepare bread for sandwiches.
  10. Lay each slice of bread out on a tray and butter them so they'll be ready to create the sandwich.
  11. Once all ingredients are ready, start by laying a slice of cheddar on the bottom.
  12. Add Goetta/Scrapple on top of Cheddar.
  13. Add Pepper Jack slice on top of Goetta/Scrapple.
  14. Add Bacon on top of Pepper Jack slice.
  15. Add sauteed peppers and onions on top of bacon.
  16. Top with slice of Colby jack cheese and prepare sandwich for skillet.
  17. Pre-heat skillet.
  18. Spray with Pam and make sure both sides of sandwich are buttered.
  19. Cook as you would any grilled cheese, until cheese is melted and both sides are brown.
  20. Beware, sandwich will be rather large so take easy care when flipping sandwich.
  21. Enjoy with fries or tater tots!
