Pear and chocolate pudding
- 2 pears peeled and cored
- 1/2 lemon juice
- 1 tbsp muscovado sugar (light)
- 2 tsp cognac (optional)
- 25 grams ground almond
- 1 tbsp cocoa powder
- 50 grams icing sugar
- 1 egg white
- Preheat oven to 160C.
- Chop pears and put them on a pan with lemon juice and sugar
- Spoon into little ramekin and add a teaspoon of liqueour each if using
- For the topping sift icing sugar and cocoa into bowl.
- Add ground almond.
- Whisk egg white in a different bowl until stiff.
- Fold into dry ingredients.
- Spoon mixture over the pears and shake ramekins to even
- Bake for 20 to 25 minutes until topping firm to touch.
- Serve cold or warm
