Fresh Vegetable Frittata
- 1 each green and yellow pepper, chopped
- 2 Tbsp. Kraft Extra Virgin Olive Oil Tuscan Italian Dressing
- 1 tomato, seeded, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2 cloves garlic, minced
- 8 eggs
- 1/4 cup milk
- 3/4 cup Touch of Philadelphia Shredded Creamy Herb & Garlic Cheese, divided
- Cook and stir peppers in dressing in 10-inch skillet sprayed with cooking spray on medium-high heat 4 min.
- or until peppers are tender, adding tomatoes and garlic for the last minute.
- Whisk eggs and milk in medium bowl until blended.
- Stir in 1/2 cup cheese.
- Pour over vegetables in skillet; cover.
- Reduce heat to medium-low.
- Cook 10 to 12 min.
- or until centre is set.
- Sprinkle with remaining cheese; cover.
- Remove from heat.
- Let stand 5 min.
- Cut into wedges to serve.
