Stuffed Chicken and Carmalized Onions
- 4 boneless chicken breasts
- 1 cup - mushrooms diced
- 1 cup - garlic minced
- 2 onions chopped
- 1 bottle blue moon ale
- 1 cup - spinach finely chopped
- 1 cup - olive oil
- 1 cup - black olives diced
- 1 cup - green olives diced
- slice chicken breasts in middle and set aside
- In a bowl, mix mushroom, garlic, spinach, green and black olives, 1/4 cup olive oil, salt and pepper set aside
- In a large skillet at high heat, poor 3/4 cup olive oil and add chopped onion, stir constantly for 20 minutes
- After 20 minutes poor bottle of ale into skillet and stir frequently until carmalization, after carmalization take out onions and place in a bowl and set aside
- take olive mixture and stuff into chicken breasts and place chicken breasts into large skillet, poor 1/2 cup of white wine and rest of olive oil, cook for 15 minutes or until golden brown
- after chicken is golden brown place chicken breasts on a plate and top with carmalized onions and serve
