Stuffed Zucchini

  1. Heat oven to 400 degrees F.
  2. Cut zucchini lengthwise in half; scoop out centres onto cutting board, leaving 1/8-inch-thick shells.
  3. Place shells in 13x9-inch baking dish.
  4. Chop zucchini flesh.
  5. Melt 1 Tbsp.
  6. margarine in large skillet on medium-high heat.
  7. Add onions and chopped zucchini; cook and stir 3 min.
  8. or until onions are crisp-tender.
  9. Add tomatoes and bacon; cook 2 min.
  10. Stir in cheese.
  11. Spoon into zucchini shells.
  12. Melt remaining margarine in same skillet.
  13. Add bread crumbs; cook and stir 3 min.
  14. or until golden brown.
  15. Sprinkle over filled shells.
  16. Bake 15 min.
  17. or until heated through.
