Chocolate Sparkle Puffs

  1. Preheat oven to 120C ( 250F ).
  2. Line biscuit or flat baking trays with baking paper.
  3. Beat the egg whites until firm peaks form.
  4. Slowly add the sugar, one spoon at a time.
  5. Mix until stiff and glossy.
  6. Fold in the grated chocolate and the cocoa powder.
  7. Spoon into small mounds (1 -2 teasoons) or pipe onto the trays.
  8. Top with the sprinkles or the chopped nuts.
  9. Bake 1 1/2 hours until dry and firm.
  10. Allow to cool in the oven.
  11. Store in an airtight container.
