Pork Vegetable Soup Recipe
- 1 pound pork stew meat, cut into 1/2" cubes
- 1 tbsp. veg. oil
- 1 c. minced onion
- 1 teaspoon paprika
- 3 c. chicken broth
- 1 c. peeled potatoes, cut into 1/2" cubes
- 1 c. frzn whole kernel corn
- 1 c. picante sauce
- 1 c. zucchini, cut into 1/2" cubes
- 1/2 teaspoon chopped garlic
- 1 (1 lb.) can Northern beans, cooked
- 1/8 teaspoon grnd black pepper
- 2 c. torn fresh spinach
- In a large kettle, brown half of the meat cubes.
- Remove the meat cubes and brown the remaining meat cubes with the minced onion and paprika.
- Drain off the remaining fat.
- Return all the meat mix to the kettle.
- Add in the chicken broth.
- Bring to boiling reduce heat, cover and simmer 30 min.
- Remove fat.
- Add in the potatoes, whole kernel corn, picante sauce, zucchini, garlic, beans and pepper.
- Return to boiling, reduce heat.
- Cover and simmer 20 min or possibly till vegetables are tender.
- Stir in torn spinach and simmer another 3 min.
- Yield: 12 servings.
