Tomato and Basil Linguine
- 9 ounces fresh linguine
- 1 bunch fresh broccoli, cut into florets
- 4 plum tomatoes, seeded and chopped
- 3 tablespoons red wine vinegar
- 3 tablespoons olive oil
- 3 scallions, chopped
- 14 cup chopped fresh basil
- 12 teaspoon salt
- 18 teaspoon pepper
- grated parmesan cheese
- In a large pot of boiling water, cook linguine and broccoli until just tender, 2-3 minutes; drain well and transfer to a large bowl.
- Add remaining ingredients, except cheese, and toss with linguini and broccoli.
- Serve warm or chilled with the cheese.
