Garlicky parsley red potatoes

  1. In a medium saucepan, place garlic, 1tbls salt, potatoes, and enough cool water to cover.
  2. Bring to a boil.
  3. Boil potatoes till they are just folk tender.
  4. Preheat oven to 450F
  5. Remove potatoes from water.
  6. do not discard remaining water, but do remove from heat
  7. Place potatoes on a baking sheet tossed with 1-2 tablespoon olive oil.
  8. sprinkle with coarse salt and pepper
  9. Place in hot oven to toast and brown a bit.
  10. Approximately 20 to 25 minutes depending on your oven.
  11. Remove from oven and sprinkle with parsley.
  12. Serve
  13. I saved my water from the potatoes to to steam green beans and sweet peppers
