Garlicky parsley red potatoes
- 4 medium Red or white waxy potatoes, cleaned and peeled ( if you want them peeled)
- 1 tbsp Diced garlic
- 1/2 tbsp salt ( I used regular table salt)
- 1 tbsp Extra virgin olive oil
- 1 tbsp coarse grain salt
- 1/2 tsp ground black pepper
- 1/3 cup chopped parsley
- In a medium saucepan, place garlic, 1tbls salt, potatoes, and enough cool water to cover.
- Bring to a boil.
- Boil potatoes till they are just folk tender.
- Preheat oven to 450F
- Remove potatoes from water.
- do not discard remaining water, but do remove from heat
- Place potatoes on a baking sheet tossed with 1-2 tablespoon olive oil.
- sprinkle with coarse salt and pepper
- Place in hot oven to toast and brown a bit.
- Approximately 20 to 25 minutes depending on your oven.
- Remove from oven and sprinkle with parsley.
- Serve
- I saved my water from the potatoes to to steam green beans and sweet peppers
