Spareribs With Black Beans and Chiles
- 1 lb spareribs, cut into bite-sized chunks
- 2 teaspoons light soy sauce
- 1 tablespoon shaoxing wine
- 1 teaspoon gingerroot, fresh finely chopped
- 1 tablespoon fermented black beans (purchase from Asian market)
- 1 teaspoon chili flakes, to taste
- Bring a large pan or wok of water to a boil over a high heat.
- Add the ribs to blanch.
- Drain the ribs and place in a heatproof bowl with soy sauce, shaoxing wine, and ginger - mix.
- Top with black beans and generous amounts of chili flakes.
- Steam ribs over high heat for 30 minutes or until cooked through.
