Spareribs With Black Beans and Chiles

  1. Bring a large pan or wok of water to a boil over a high heat.
  2. Add the ribs to blanch.
  3. Drain the ribs and place in a heatproof bowl with soy sauce, shaoxing wine, and ginger - mix.
  4. Top with black beans and generous amounts of chili flakes.
  5. Steam ribs over high heat for 30 minutes or until cooked through.
