Beef with Buckwheat Noodles
- 4 x small eye fillet beef steaks Whole Foods 1 lb For $7.99 thru 02/09
- 1/2 cup KRAFT FREE* Thai Lime & Coriander Dressing
- 1 tablespoon grated ginger
- 2 spring onions, finely chopped
- 200g gluten free buckwheat noodles or rice noodles
- 100g bean shoots
- 80g baby spinach leaves
- 1/4 cup mint leaves, roughly torn
- 1/4 cup un salted peanuts, lightly toasted, roughly chopped
- Combine steaks, 2 tablespoons of the dressing, ginger and spring onions.
- Set aside to marinate.
- Sear beef on a preheated pan or grill plate for 3-4 minutes each side, or until cooked to your liking.
- Cook noodles in boiling water for 4-5 minutes until tender, drain well.
- Toss together the noodles, beanshoots, spinach and mint leaves with the remaining dressing.
- Serve with beef steaks and sprinkled with peanuts and extra mint leaves.
