Canyon Road Eggs Benedict Recipe

  1. Guacamole Hollandaise: Mash avocados; whip in mayonnaise, lime juice, and Tabasco with a wire whisk till smooth.
  2. Pour over Large eggs Benedict.
  3. Toast the English muffins and place the 2 halves on each plate.
  4. Lightly saute/fry Canadian bacon and top each muffin half with a slice.
  5. Poach Large eggs and top each slice of bacon with 1 egg.
  6. Pour Guacamole Hollandaise sauce over them.
  7. Garnish with black olive slices and pimento and serve.
