Zucchini Bread

  1. Combine flour, soda, salt, baking powder, cinnamon and nuts (set aside).
  2. Beat eggs lightly in a large mixing bowl.
  3. Add sugar, oil and vanilla.
  4. Beat until creamy.
  5. Mix in zucchini and pineapple.
  6. Add dry ingredients, stirring only until dry ingredients are moistened.
  7. Spoon batter into 2 well-greased and floured 9 x 5 x 3-inch loaf pans.
  8. Bake at 350u0b0 for about 50 minutes and test.
  9. Cool 10 minutes before removing from pans. Turn onto rack and cool.
