Wilted Spinach Salad

  1. In 3-quart casserole snip bacon into 1 inch pieces.
  2. Cover with paper towel.
  3. Microwave at High (10) 2 to 3 minutes, until crisp.
  4. With slotted spoon, place bacon on paper towels to drain. To bacon drippings add vinegar, sugar, salt, pepper and tarragon. Microwave at High (10) 2 to 3 minutes, until mixture boils.
  5. Stir in celery and onion.
  6. Gradually add spinach to hot dressing, tossing to coat each piece.
  7. Add crumbled bacon, orange segments and cashews.
  8. Toss again lightly.
  9. Serve immediately.
  10. Total Microwave Cooking Time:
  11. 4 to 6 minutes.
  12. Makes 8 to 10 servings.
