Wilted Spinach Salad
- 3 strips bacon
- 1/4 c. vinegar
- 2 tsp. sugar
- 1/4 tsp. salt
- 1/8 tsp. pepper
- 1/8 tsp. dried tarragon
- 1/2 c. sliced celery
- 1 small red onion, thinly sliced
- 1 pkg. fresh spinach leaves, torn (about 8 c. total)
- 2 medium oranges, peeled and sliced*
- 1/3 c. cashews, coarsely broken
- In 3-quart casserole snip bacon into 1 inch pieces.
- Cover with paper towel.
- Microwave at High (10) 2 to 3 minutes, until crisp.
- With slotted spoon, place bacon on paper towels to drain. To bacon drippings add vinegar, sugar, salt, pepper and tarragon. Microwave at High (10) 2 to 3 minutes, until mixture boils.
- Stir in celery and onion.
- Gradually add spinach to hot dressing, tossing to coat each piece.
- Add crumbled bacon, orange segments and cashews.
- Toss again lightly.
- Serve immediately.
- Total Microwave Cooking Time:
- 4 to 6 minutes.
- Makes 8 to 10 servings.
