Baked Coconut Granola Avocado Fries
- 1 cup Gluten Free Granola (I Used Bobs Red Mill Honey Oat)
- 1/2 cups Sweetened Coconut Flakes
- 1/2 cups Old-fashioned Rolled Oatmeal
- 1/4 cups Brown Sugar, Packed
- 1/2 teaspoons Cinnamon
- 3 Large Egg Whites
- 2 Large Avocados
- Cooking Spray
- 1/2 cups Plain, Non-fat Greek Yogurt
- 1/2 cups Strawberries, Roughly Chopped
- 1 Tablespoon Honey Or Maple Syrup, Or More To Taste (or Sweetener Of Choice)

- Preheat your oven to 450 F and line a large rimmed baking sheet with parchment paper.
- 2.
- In a food processor, crush the granola just slightly so that it still remains a little chunky.
- Pour into a large plate and mix with the coconut flakes.
- Set aside.
- 3.
- Add the oats, brown sugar and cinnamon into the food processor and blend until the oats are fine and flour-like.
- Pour into another large plate.
- 4.
- Pour the egg whites into a separate bowl.
- Peel and pit the avocado and cut each half into wedges (I got 4 wedges per each half of avocado).
- 5.
- Coat an avocado wedge in the oatmeal mixture and then in egg white.
- Finally, press the avocado into the crushed granola, really pressing and packing it on until it coats the avocado wedge.
- Place onto the prepared baking sheet.
- Repeat for remaining wedges.
- 6.
- Spray the avocado fries with cooking spray and bake for 7 minutes.
- Flip and spray with a little more cooking spray, and bake until golden brown and crispy, about 3-5 minutes.
- 7.
- While the fries cook, blend the yogurt, strawberries, and sweetener in a food processor until creamy and smooth.
- 8.
- Dip the avocado fries in the sauce and devour!
