Adam's Famous Tortilla Soup
- 4 tablespoons butter
- 13 cup extra virgin olive oil
- 1 large onion, diced
- 1 fresh jalapeno, chopped (with or without seeds)
- 4 garlic cloves, chopped very fine
- 2 carrots, sliced
- 6 celery ribs, sliced
- 1 lb boneless skinless chicken breast, chopped finely
- 12 teaspoon cumin, powered
- 1 teaspoon salt
- 1 teaspoon chili powder
- 12 cup flour
- 1 (14 ounce) can stewed tomatoes
- 4 teaspoons chicken bouillon cubes
- 6 -7 fresh cilantro stems, coarsely chopped
- 2 tablespoons lime juice
- tortilla chips, slightly crushed
- sour cream, a dollop
- muenster cheese, shredded
- Heat Butter and oil in a large pot until butter is melted.
- Saute onion, jalapeno, garlic, carrots, celery and chicken; simmer 5 minutes.
- Add cumin, salt, chili powder, lemon pepper and flour.
- Stir to blend.
- Add tomatoes and chicken broth.
- Mix well.
- Simmer for 1 hour.
- Add cilantro and lime juice.
- Put in individual serving bowls in order of preference: tortilla chips, sour cream, cheese, and soup.
