Citrus Apple & Pear Salad
- 1/4 cup olive oil
- 2 tablespoons rice vinegar
- 1 tablespoon sugar
- 1 tablespoon lime juice
- 1 teaspoon freshly grated lime zest
- 1 teaspoon finely chopped fresh garlic
- 1/2 teaspoon salt
- 1/4 teaspoon chili powder
- Pepper, if desired
- 3 medium (4 cups) tart red apples, cut into 1/2-inch pieces
- 2 small (2 cups) pears, cut into 1/2-inch pieces
- 1/2 cup sliced red onion rings, cut in half
- 2 cups baby spinach leaves, torn
- 5 slices cooked bacon, chopped
- 4 ounces (1 cup) shredded Cheddar cheese
- Combine all dressing ingredients in medium bowl; beat with wire whisk until sugar is dissolved.
- Set aside.
- Combine apples, pears, onion and spinach leaves in large bowl.
- Pour dressing over apple mixture; toss to coat.
- Sprinkle with bacon and cheese.
- Serve immediately.
