Cornish Hens with Raisin-Rice Pilaf
- 4 each cornish game hens 1 1/2 pounds each
- 1/4 cup brandy
- 1/2 cup apple juice unsweetened
- 1 teaspoon paprika
- 1 x rice pilaf raisin
- 1 x carrots curls and strips
- 1 x celery leaves
- 1/4 cup raisins, seedless
- 1/2 cup brandy
- 113 cups wild rice cooked
- 113 cups carrots diced
- 23 cup celery diced
- 1 teaspoon cinnamon
- 1 x nonstick cooking spray
- Remove giblets from hens; discard.
- Rinse hens under cold, running water and pat dry.
- Remove skin and trim excess fat.
- Split hens in half lengthwise.
- Place hens, meaty side up on a rack in a roasting pan.
- Combine brandy, apple juice, paprika in a bowl.
- Stir well.
- Brush hens with mixture.
- Bake at 350F (180C) F for 1 hour or until juices run clear, basting every 15 minutes.
- Serve with rasin-rice pilaf.
- Garnish with carrot curls and strips.
