Caesar Salad Tacos Recipe
- 1 x 10 ounce. package torn romaine lettuce
- 2 c. shredded Cheddar cheese, divided
- 1 x ripe avocado, diced (optional)
- 1 x 4 ounce. can diced green chilies
- 1 x 15 ounce. can black beans, liquid removed and rinsed
- 1 c. frzn whole-kernel corn, thawed
- 1/3 c. Caesar salad dressing (I use Ken's)
- 1/4 c. taco sauce (not salsa!)
- 12 x taco shells, warmed diced tomatoes
- Combine lettuce, 1 c. cheese, avocado, chilies, beans and corn in large bowl.
- Combine dressing and taco sauce in a small bowl and mix well.
- Pour over the lettuce mix and toss well to coat.
- Fill each taco shell with salad mix, and top with remaining cheese and tomatoes.
