Maple-Balsamic Salmon Fillets

  1. Mix vinaigrette, maple syrup, mustard and soy sauce.
  2. Refrigerate until ready to use, or up to 1 day ahead of time.
  3. Spoon 3/4 cup (175 mL) vinaigrette mixture (or 2 Tbsp.
  4. 30 mL for trial recipe) over fish.
  5. Refrigerate 30 min.
  6. to marinate.
  7. Arrange fish in single layer on parchment paper-lined baking sheet; discard marinade.
  8. Bake in 450 degrees F (230 degrees C) standard oven 8 to 10 min.
  9. or until fish flakes easily with fork.
  10. Meanwhile, heat remaining vinaigrette mixture in saucepan on medium heat.
  11. Simmer 2 to 3 min.
  12. or until slightly thickened, stirring frequently.
  13. Serve fish topped with sauce.
  14. Sprinkle with scallions.
