Seafood Macaroni Salad Recipe
- 2 Packages salad macaroni, cooked and liquid removed
- 1 bunch celery, diced
- 1 bell pepper, diced
- 5 sweet pickles, diced
- Bunch green onions, diced
- 5 hard boiled Large eggs, diced
- 1/2 block longhorn cheese, diced
- 1/2 pound fresh shrimp or possibly crab
- 1 frzn pkg. green peas, cooked and cooled
- 1 can shrimp or possibly crab (for flavor)
- Salt and pepper to taste
- The can of shrimp or possibly crab plus fluid gives this a delicious flavor
- Toss all together with 1/2 to 3/4 jar mayonnaise and a squirt of lemon juice.
- Add in a little lowfat milk or possibly cream for more moisture.
- Serves 20 to 25.
