Southwest Chorizo Dressing
- 2 tbsp olive oil, extra virgin
- 1 lb local butcher shop quality chorizo
- 1 onion, chopped
- 2 stick celery, diced
- 2 carrot, diced
- 2 colored bell peppers, chopped
- tsp ground cumin
- 1 tsp minced garlic
- 1 tsp red chili flakes(optional)
- 2 jalapenos, seeded and minced(optional)
- 1/2 bunch cilantro, minced
- 8 oz mushrooms
- 6 cup cornbread crumbs
- 4 cup bread crumbs
- 4 eggs
- 4 cup chicken broth
- Heat oil and add chorizo.
- Cook until done.
- Add onion, celery and carrots.
- Cook until soft.
- Add peppers and mushrooms with seasonings.
- Cook 2 minutes and remove from heat.
- Put cooked ingredients into a mixing bowl and stir in egg.
- Add bread crumbs and broth.
- Stir and pour into a oiled or buttered 9 by 13 baking pan.
- Bake in a 350 F oven for 45 to Minutes until slightly crispy on top.
