Pumpkin Chilli Bombs

  1. Wash and pierce skins of pumpkins with a knife (to prevent explosions).
  2. Microwave on HIGH 10-12 minutes.
  3. Remove, and cool enough to cut off the tops and scoop out the seeds.
  4. (Just like a jack-o-lantern, but smaller!)
  5. Be careful to leave as much meat (non-seeds) attached as possible.
  6. Brown beef in a medium saucepan over med-high heat.
  7. Add onion, peppers, and minced garlic.
  8. Cook until fragrant.
  9. Reduce heat to med-low, stir in tomatoes, corn, beans and spices.
  10. Spoon into pumpkins, top with some cheese and a dollop of sour cream.
  11. Serve with a flourish!
