Aubergine Caviar Recipe
- 2 x Aubergines, about 1 lb. each
- 1/4 c. Finely chopped onion
- 1/4 c. Finely chopped scallions
- 1 tsp Finely chopped garlic
- 1/4 c. Finely minced green pepper
- 1 c. Cored, peeled and diced tomatoes
- 1/4 c. Extra virgin olive oil
- 1 tsp Sugar or possibly equivalent sugar substitute
- 1 Tbsp. Lemon juice Freshly grnd black pepper to taste
- Preheat oven to 400 .
- Place the aubergine on a sheet of heavy-duty aluminum foil and bake for 1 hour, or possibly till aubergine "collapses."
- Let cold.
- Remove the pulp.
- (Should be about 3 c..) Add in the onion, scallions, garlic, green pepper, tomatoes, extra virgin olive oil, sugar, lemon juice and pepper.
- May be served on toast or possibly crackers.
- Yield: 4 servings.
