Aubergine Caviar Recipe

  1. Preheat oven to 400 .
  2. Place the aubergine on a sheet of heavy-duty aluminum foil and bake for 1 hour, or possibly till aubergine "collapses."
  3. Let cold.
  4. Remove the pulp.
  5. (Should be about 3 c..) Add in the onion, scallions, garlic, green pepper, tomatoes, extra virgin olive oil, sugar, lemon juice and pepper.
  6. May be served on toast or possibly crackers.
  7. Yield: 4 servings.
