Grapefruit and Shrimp Salad

  1. Cut green onion lengthwise into thin strips.
  2. Cut strips across into 3-inch lengths.
  3. Drop in small bowl of ice water.
  4. Cover and refrigerate 1 hour.
  5. In medium-size bowl, combine shrimp and grapefruit sections.
  6. Prepare Grapefruit Vinaigrette (see below).
  7. Add 2 tablespoons vinaigrette to shrimp mixture; toss to combine well.
  8. Cover shrimp mixture and remaining vinaigrette.
  9. Refrigerate 1 hour.
  10. When ready to serve, tear Boston lettuce and radicchio into bite-size pieces.
  11. Drain green onion curls.
  12. In large bowl, toss together onion curls, lettuce, radicchio, chicory, and celery.
  13. Add shrimp mixture; toss once.
  14. Serve with remaining vinaigrette.
  15. Grapefruit Vinaigrette: In 1-cup screw-top jar with tight-fitting lid, combine 1/4 cup olive oil, 3 tablespoons grapefruit juice, 1 1/2 tablespoons cider vinegar, 1 teaspoon Dijon-style prepared mustard, 1/2 teaspoon sugar, and 1/4 teaspoon dried oregano leaves, crumbled.
  16. Cover tightly and shake until uniformly combined.
