Thyme and Ginger Brownies
- 360 g dark chocolate
- 250 g butter, unsalted
- 4 eggs
- 295 g brown sugar
- 65 g glace ginger, chopped
- 1 14 teaspoons thyme, dried
- 75 g flour
- 1 teaspoon baking powder
- 14 teaspoon salt
- 100 g dark chocolate
- 30 g butter, unsalted
- 40 ml cream
- Line a 22cm square pan.
- Heat oven to 160C.
- Melt butter and half the chocolate, set aside to cool.
- Whisk eggs and sugar until thick and pale.
- Add melted chocolate mixture, finely chopped chocolate, ginger and thyme.
- Sift flour and baking powder and salt.
- Gently fold through the chocolate mix.
- Spoon cake mixture into the lined pan and bake for 1 hour and 10 minutes or until firm on top.
- Cool in pan.
- For the chocolate glaze, melt chocolate, butter and cream.
- Cool slightly until a spreadable consistency, then spread over the cake.
- Cut into squares.
