Pasta with Spicy Tomato Sauce and Vegetables
- - penne pasta, uncooked
- 1 qt. asparagus, cut into 1-1/2-inch pieces
- 2 cups onions, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 2 cups red peppers, cut into 1-1/2 inch-wide strips
- 1/2 cup oil
- 2 cups Roma tomatoes, chopped Safeway 1 lb For $1.29 thru 02/09
- 1 cup sun-dried tomatoes, drained, chopped
- - boneless skinless chicken breasts, grilled, cut into strips
- 2 qt. Spicy Tomato Sauce
- Cook pasta as directed on pkg.
- Meanwhile, saute asparagus, onions and peppers in hot oil in large skillet on medium-high heat 2 to 3 min.
- or until crisp-tender.
- Add tomatoes; mix well.
- Stir in chicken, Spicy Tomato Sauce and drained pasta.
- Reduce heat to medium; cook 5 to 6 min.
- or until heated through, stirring frequently.
