Atsuage and Green Pepper Stir-Fried in Miso Sauce

  1. Blanch the atsuage in boiling water to remove excess oil and cut it into 3 cm cubes.
  2. Cut the green onion into 2 cm pieces.
  3. Remove the seeds from the green peppers and cut into chunks.
  4. Mix together all the ingredients for the miso sauce.
  5. Heat the sesame oil in a frying pan.
  6. Add the ginger slices to the pan.
  7. When the ginger becomes fragrant, add the green onions and atsuage and stir-fry over high heat.
  8. When the atsuage and green onions are browned, add the green peppers and stir-fry for 1 more minute.
  9. Pour in the mixed miso sauce from Step 2.
  10. Shake the frying pan to make sure the sauce is mixed in well.
  11. Turn off the heat and transfer to a dish.
  12. If you like it spicy, you can add doubanjiang (around 1/2-1 teaspoon) when you begin stir-frying the ginger.
