Atsuage and Green Pepper Stir-Fried in Miso Sauce
- 250 grams Atsuage
- 1 Green onion or scallion
- 3 Green peppers
- 5 slice Ginger (thinly sliced)
- 1 Sesame oil
- 2 tbsp Miso
- 1 tbsp Light brown sugar (or white sugar)
- 1 tbsp Sake
- 1 tbsp Mirin
- 1/2 tbsp Soy sauce
- Blanch the atsuage in boiling water to remove excess oil and cut it into 3 cm cubes.
- Cut the green onion into 2 cm pieces.
- Remove the seeds from the green peppers and cut into chunks.
- Mix together all the ingredients for the miso sauce.
- Heat the sesame oil in a frying pan.
- Add the ginger slices to the pan.
- When the ginger becomes fragrant, add the green onions and atsuage and stir-fry over high heat.
- When the atsuage and green onions are browned, add the green peppers and stir-fry for 1 more minute.
- Pour in the mixed miso sauce from Step 2.
- Shake the frying pan to make sure the sauce is mixed in well.
- Turn off the heat and transfer to a dish.
- If you like it spicy, you can add doubanjiang (around 1/2-1 teaspoon) when you begin stir-frying the ginger.
