Chinese Chicken and Ginger
- 2 teaspoon oil
- 1 onion, sliced finely
- 2 teaspoon fresh grated ginger
- 500g skinless chicken breast fillets, thinly sliced
- 2 cups sliced cabbage
- 1 stick celery, sliced diagonally
- 1 red capsicum, sliced
- 425g can baby corn, drained
- 1/2 cup water
- 1 tablespoon VEGEMITE
- 1 tablespoon honey
- 1 teaspoon cornflour
- Steamed rice or noodles to serve
- Heat oil in a frying pan or wok, add onion and ginger and cook until softened.
- Add chicken and cook until browned.
- Add cabbage, celery, capsicum and baby corn and cook 2 - 3 minutes.
- Add combined water, Vegemite*, honey and cornflour.
- Bring to the boil, stirring, until thickened.
- Serve immediately with rice or noodles.
