Indian Puris
- 2 tablespoons shortening
- 2 cups sifted all-purpose flour
- 12 teaspoon salt
- 12 cup shredded cheese
- 12-23 cup water
- Cut shortening into flour mixed with salt.
- Add cheese.
- Stir in enough water to make soft dough.
- Knead on floured surface for about 10 minutes.
- Let rest 10 minutes.
- Roll very thin, to 16x10 inches, on floured surface.
- Cut into 2-1/2 inch circles.
- Fry in deep hot fat (385 degrees) till puffed and golden, 2 to 3 minutes, turning once.
- Drain.
