Tart Green Salad with Avocado Dressing
- 4 c. sorrel
- 1/2 cucumber
- 1/2 c. lemon balm
- 2 tbsp. chives
- Coarse salt
- ground black pepper
- 1/2 ripe avocado
- 1 anchovy
- 1 clove garlic
- 1 tbsp. fresh lemon juice
- 1/2 c. low-fat buttermilk
- Coarse salt
- ground black pepper
- Combine the salad ingredients in a large bowl and season with salt and pepper.
- Place the dressing ingredients and 1/4 cup of water in a blender and puree until smooth.
- Season with salt and pepper.
- (If the dressing is too thick, add water, one tablespoon at a time, until the desired consistency is reached.)
