Gingered Pork With Orange
- 4 pork chops
- salt and pepper
- 1 tablespoon vegetable oil
- 2 garlic cloves, crushed
- 3 oranges (juice and rind from 1/2 orange cut into julienne strips)
- 2 pieces preserved gingerroot, chopped
- 2 tablespoons ginger syrup
- orange slice
- preserved gingerroot
- Season the chops.
- Heat the oil in a flat-bottomed wok and fry 2 chops at a time for 4-5 minutes on each side, until golden brown the thoroughly cooked.
- Drain on kitchen paper and keep hot on a warmed serving dish.
- Pour off ay excess fat from the work.
- Add the garlic, orange juice and rind, then stir in the ginger and syrup.
- Gradually bring to the oil, stirring then simmer for 2 minutes.
- Spoon the sauce over the chops, garnish with orange slices and ginger and serve immediately.
