Grilled Pizza with Fig, Pancetta and Gorgonzola

  1. Light grill and heat to low heat.
  2. Place the sauce and toppings near the grill.
  3. Carefully place crusts on grill.
  4. Cook until golden on the bottom, about 2 minutes.
  5. Flip the crusts.
  6. Quickly top with sauce, mozzarella, tomato slices, pancetta, and Gorgonzola.
  7. Cover grill.
  8. Cook until the bottom of the crust is browned and cheese is bubbling, about 3 minutes.
  9. Top with spinach and figs.
  10. Cover grill.
  11. Cook until spinach wilts, about 2 minutes.
  12. Remove pizza from grill, drizzle with warm balsamic glaze and serve.
