Sour Cream Bran Muffins Recipe
- 1/2 c. softened butter
- 1/4 c. packed brown sugar
- 1 egg beaten
- 1 c. lowfat sour cream
- 1/4 c. molasses
- 1 1/2 c. raisins
- 1 c. flour
- 1 teaspoon soda
- 1/4 teaspoon salt
- 1 c. shreds of shredded Wheat 'n' Bran cereal (Nabisco)
- Cream butter, gradually add in sugar beating well at medium speed.
- Add in egg, lowfat sour cream and molasses; mix well.
- Stir in raisins.
- Combine flour, soda, salt and cereal (shred between fingers); add in to creamed mix, stirring just till moistened.
- Spoon into greased muffin pans, filling 3/4 full.
- Bake at 400 degrees for 15 min or possibly till done.
- Makes 16 muffins.
