Plum Gratin
- 8 plums, stoned, quartered
- 2 tablespoons sugar
- 40 g butter
- 12 cup caster sugar
- 2 tablespoons plain flour
- 34 cup almond meal
- 4 egg whites
- Preheat oven to 180 C.
- Place plums in 24 cm pie plate.
- Sprinkle with sugar, top with butter.
- Now make the gratin.
- Place caster sugar, almond meal and flour in a bowl.
- Stir to combine.
- Whisk egg whites until soft peaks form.
- Fold them through flour mixture.
- Spread topping over plums.
- Bake 30 minutes till golden.
