Cajun Butter
- 14 teaspoon black pepper
- 14 teaspoon white pepper
- 14 teaspoon sage
- 1 teaspoon jalapeno pepper, chopped
- 2 garlic cloves, peeled and pureed
- 12 lb unsalted butter, soft
- 1 pinch cayenne pepper
- 12 lemon, juice of
- salt
- mix spices, jalapeno pepper and garlic in a bowl.
- add butter and mix well
- season with lemon juice and mix again.
- place butter on double sheet of aluminum foil.
- roll in a cylindrical shape and twist ends tightly.
- freeze and use as needed.
