Mediterranean Breakfast Pizza

  1. Heat oven to 425 degrees F.
  2. Place 1 Saute Express square in bowl.
  3. Microwave 5 seconds or until just softened.
  4. Spread over pizza crust.
  5. Bake 6-7 minutes or until top is golden brown.
  6. Beat eggs in another bowl with whisk until well mixed; set aside.
  7. Melt 1 Saute Express square in 10 inch nonstick skillet over medium-high just until bubbles begin to form.
  8. Add onions and sun-dried tomatoes; cook 2-3 minutes until softened.
  9. Add spinach; cook until leaves are just wilted.
  10. Reduce heat to medium.
  11. Add remaining Saute Express square to vegetables in pan.
  12. Continue cooking just until melted.
  13. Pour egg mixture into skillet.
  14. Cook, stirring gently, 3-4 minutes or until eggs are just set but still moist.
  15. Sprinkle 1/3 cup cheese evenly over prepared crust.
  16. Spread egg mixture over cheese.
  17. Top with remaining shredded cheese.
  18. Bake 4-6 minutes or until cheese is melted.
