Chicken Cordon Bleu Recipe
- 2 chicken breasts, halved (2 1/4 pound & boned)
- Salt & pepper
- 4 slices ham (4 ounce.)
- 4 slices Swiss cheese (4 ounce.)
- 3/4 c. flour
- 2 Large eggs, beaten
- 1 c. fine dry bread crumbs
- 1/2 c. butter
- 1/4 c. white wine
- Mushroom sauce
- Flatten chicken breasts with wooden mallet.
- Sprinkle salt and pepper.
- Top each with ham and then cheese.
- Fold chicken over.
- Dip in flour, egg, then fine bread crumbs.
- In a fry pan, saute/fry in butter till a light golden.
- Sprinkle white wine over the chicken.
- Place in a greased roasting pan.
- Cover pan with aluminum foil.
- Bake at 350 degrees for 30 min.
- When serving, top chicken with mushroom sauce.
