Lemon Lovers' Tabbouleh

  1. In a large bowl, combine bulgar and cold water.
  2. Stir well and set aside until liquid is absorbed about 10 minutes.
  3. Meanwhile in a small bowl, combine lemon juice, cumin, salt and pepper to taste, whisk in olive oil.
  4. Add to bulgar and set aside until liquid is absorbed.
  5. about 15 minutes.
  6. Add parsley, cucumber, tomatoes, mint and green onions and toss well.
  7. Cover and chill thoroughly.
