Fried Chicken Mascarpone
- 6 Boneless Skinless Chicken Breast
- 2 cup All purpose flour
- 1/4 cup Season Salt
- 3 tbsp Garlic Powder
- 3 tbsp Black Pepper
- 3 tbsp Onion Powder
- 1 large Yellow Onion
- 10 Grape Tomatoes
- 8 oz Mascarpone Cheese
- 16 oz Mashed Potatoes
- Mix seasoning into a large ziplock bag.
- Add chicken breasts into ziplock bag.
- Shake bag until Chicken breasts are powdered.
- Depending on size of bag, you may need to repeat this step as you go.
- Make mashed potatoes.
- If you are using instant mashed potatoes, make for serving of 6.
- Put a tablespoon of canola oil in a sauce pan.
- Slice onion and add to heated canola oil pan.
- Cook onions on low until soft.
- Add mascarpone cheese to onions.
- Slice grape tomatoes in half and add to Cheese and onions.
- Stir cheese, onion, tomato sauce until it's playable.
- Remove from heat.
- Heat large oil pan.
- Line pan with corn oil.
- Heat on medium-low until oil is nice and hot.
- Add breasts to oil.
- Cook each side thoroughly.
- Good rule of thumb is cook on one side until you see the chicken turn white about 1/4 inch above oil line.
- Then flip.
- Flour/breading should be golden brown.
- Once chicken is done.
- Plate a scoop of mashed potatoes.
- Place chicken breast on potatoes.
- Add onions and sauce to top of chicken.
- Eat and Enjoy.
