Really Good Rice Pudding
- 6 cups whole milk
- 34 cup carolina rice
- 1 cup heavy cream
- 34 cup sugar
- 3 egg yolks, beaten
- 2 teaspoons vanilla
- 14 teaspoon salt
- 1 teaspoon cinnamon
- Rinse a medium saucepan with cold water (don't dry).
- Pour in milk & bring to a boil over medium heat.
- Stir in rice & return to a boil.
- Reduce heat, and simmer, uncovered.
- until rice is tender (about 55 minutes) stirring occasionally.
- Meanwhile, in a small bowl combine cream, sugar, yolks, vanilla.
- and salt.
- Set aside.
- When rice is tender, put a small amount of rice mixture in yolk mixture to temper and then add to the pot.
- Heat to a slow boil.
- Remove from heat.
- and pour into a 2 quart dish.
- sprinkle with cinnamon and enjoy!
