Really Good Rice Pudding

  1. Rinse a medium saucepan with cold water (don't dry).
  2. Pour in milk & bring to a boil over medium heat.
  3. Stir in rice & return to a boil.
  4. Reduce heat, and simmer, uncovered.
  5. until rice is tender (about 55 minutes) stirring occasionally.
  6. Meanwhile, in a small bowl combine cream, sugar, yolks, vanilla.
  7. and salt.
  8. Set aside.
  9. When rice is tender, put a small amount of rice mixture in yolk mixture to temper and then add to the pot.
  10. Heat to a slow boil.
  11. Remove from heat.
  12. and pour into a 2 quart dish.
  13. sprinkle with cinnamon and enjoy!
