Party Potato Salad
- 7 large Red potatoes, boiled till slightly firm
- 7 Eggs, boiled
- 1/4 cup Olive oil
- 1/4 cup White viniger
- 1 tsp each, Salt and Pepper
- 1 tbsp Celery Seed
- 1 tbsp Sugar
- 1 tbsp Parsley
- 1/2 medium Onion small chop
- 3 stalk Celery small chop
- 2 cup Hellmans Mayo
- Boil and drain potatoes and eggs.
- Make a marinade with remaining ingredients EXCEPT mayo.
- While potatoes are still warm, peel and chop.
- Add to marinade and stir as you go.
- Peel and chop eggs.
- Add to bowl.
- Add mayo and fold gently but throughly.
- Refrigerate at least 3 hours.
- Stir before serving.
- Adjust s&p if necessary.
