My Meatball Recipe
- 12 cup soft breadcrumbs
- 1 -2 cup chopped fresh spinach
- 14 teaspoon seasoning salt
- 14 teaspoon ground pepper
- 2 teaspoons pecorino romano cheese or 2 teaspoons any hard Italian cheese
- 1 teaspoon onion, finely chopped
- 1 -2 teaspoon garlic, minced
- 1 teaspoon mixed Italian herbs
- 2 teaspoons sour cream
- 1 garlic clove
- 1 -2 tablespoon olive oil
- 12 lb ground beef (could also use turkey, pork, veal, or mixture)
- Mix all the ingredients but the last 3 in a bowl.
- Mix in the ground meat.
- Form meatballs about 1 teaspoon in size.
- Add the olive oil to a cold skillet.
- Add crushed clove of garlic to olive oil and heat skillet.
- Add meatballs to hot skillet and cook until no longer pink.
