Cuban Stir Fry

  1. Remove pineapple from container, reserving juice.
  2. Cut pineapple in 3/4-inch slices; discard core if present.
  3. Heat oil in 12-inch skillet over medium-high heat; add pineapple slices.
  4. Cook 3 to 4 minutes or until beginning to brown.
  5. Divide pineapple among four plates.
  6. Meanwhile, prepare rice according to package directions.
  7. Add ham and peppers to skillet; cook 3 minutes, stirring occasionally.
  8. Add beans and rice.
  9. Cook, stirring occasionally, 3 minutes or until heated through.
  10. Stir in reserved pineapple juice.
  11. Serve with lime wedges.
  12. Makes 4 servings.
